Our gourmet restaurant is full of atmosphere that is romantic by candlelight and always elegant. The name Don Carlos is a tribute to the great Maestro Verdi, who made the ‘Milan’ his home for 27 years. Walls are filled with portraits, sketches and scenes from La Scala’s museum, the soundtrack is a collection of operatic arias.

Menus are based on traditional Milanese dishes. Our chef stamps his own identity on the classics. Everything is based on seasonality and fresh market produce, each flavour is given its own voice.

At the request of our guests, Don Carlos Restaurant adheres to a smart dress code. We kindly ask gentlemen to wear full-length trousers and closed-toe shoes.

Our wine cellar is a treasure trove of small producers

Beneath Don Carlos is an extraordinary museum of Roman architecture with walls dating back to 250 AD. We are delighted to welcome diners down to the wine cellar to view the history revealed.

Our sommelier’s particular passion is discovering small, independent Italian producers who make extraordinary wines. We introduce guests to interesting vintages that are often only available in Italy, elevating the whole dining experience. We invite you to visit our cellars for a private tasting, private dining, or simply to browse the collection and view the ancient Roman ruins.
